180° Jalapeno-Cilantro Hummus
Ingredients:
2 cans of chickpeas/garbanzo beans-- NOT DRAINED
2 cups fresh cilantro-- Rinse and pull off leaves, I chop very coarsely before adding into the processor.
2 seeded jalapeno peppers
3 garlic cloves (to taste)
1/4- 1/2 tsp of cumin (to taste)
1/8 - 1/4 cup lemon OR lime juice (or one or the other) I add this slowly as I blend and make sure the taste is right as I am mixing it in.
3 tbsp tahini
1/2 tsp garlic salt
2 tsp Himalayan pink salt
Instructions:
1: Blend the cans of chickpeas in a food processor that can puree. Dump the entire can, juice and all. This will keep you from needing to add olive oil that is traditional in hummus but adds a lot of fat.
all ingredients together in a food processor. You can add your oil gradually until you reach the desired consistency.
2: Blend the rest of the ingredients, add in lemon/lime slowly to taste.
Enjoy with cucumber, bell pepper, carrot or seed crackers like Mary's Gone Crackers.
